Recipe Share: Spinach & Cheese stuffed Meatloaf


I made this for dinner tonight & it was SO good!
So, I figured I would post the recipe. :)
(you can't see the spinach, but there's lots in there & it's really yummy!)
Spinach & Cheese Stuffed Meatloaf
Ingredients:
Loaf:
1.5 lbs. ground beef (or turkey)
3/4 c. bread crumbs
1 egg
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. Italian seasoning
Filling:
1 (10 oz.) package frozen chopped spinach, thawed & drained well
1 cup shredded low fat cheese of your choice
3 TBS grated Parmesan cheese
1 tsp. Italian seasoning
1/8 garlic powder
Topping:
1/4 cup Ketchup
1/2 cup shredded low fat cheese
Directions:
In a large bowl, lightly combine meatloaf ingredients.
On a waxed paper, pat into a 14 x 10 inch rectangle.
In a medium sized bowl, combine filling ingredients. Spread over rectangle, leaving about an inch around all edges. Starting with a short end, roll up jelly roll style. Press meat over filling at both ends to seal. Place loaf, seam side down, in a baking dish.
Bake uncovered at 350° for one hour. Spread with ketchup and sprinkle with cheese. Cook 15 minutes longer, or until cheese is melted. Let stand 5 minutes. Cut into 1 inch thick slices.
Makes 6 servings.
