Recipe Share: Crockpot Apricot Chicken

So, lately I've decided to try new recipes I've found online. This is the second one.
It came out really yummy, so I had to post it on here for you all to try.
Crockpot Apricot Chicken
Ingredients:
6 frozen boneless, skinless chicken breasts (Do not thaw)
2 pkgs. dry onion soup mix
1 c. French salad dressing
2 cup apricot preserves
4 TBS. Red wine vinegar
2 tsp. thyme
1/8 tsp. black pepper
3 TBS. Cornstarch
6 TBS. cold water
Directions:
Place chicken breasts in crockpot. Mix remaining ingredients (except water & cornstarch) in medium bowl, and pour over chicken. Stir around to coat well. Cover crockpot. Cook on low for 8 hrs. Before serving, combine cornstarch & water in small bowl. Mix until smooth. Add to the crockpot & turn the temp. to high for 10 minutes to thicken sauce. Serve over rice.
