Summer Drink Recipe: Strawberry Ade

Here is a delicious recipe that I found in an old box of recipes that I
was given from a friend, that belonged to her Grandmother.
It's very simple, tastes so fresh and summery!
 
Put some water in the bottom of s pitcher.
Add one packet of pink lemonade Crystal light and stir until
dissolved.

Cut the tops off of 2 cups (16 oz) of strawberries, and put into blender.

Add a tiny bit of the lemonade mix, and blend until liquefied.

Add blended strawberries to lemonade. Fill with cold water.
Chill in fridge, or serve over ice.

Recipe Share: Spinach Lasagna Rolls

These Spinach Lasagna Rolls come from Gina at Skinny Taste. They are perfectly portioned. They are only 6 WW points plus per serving, not bad at all. I added onion powder, garlic powder and Italian seasoning to the mix. (seasonings don't change the points.) I think next time, I might add some lean ground turkey, and just add the points in. :)

Spinach Lasagna Rolls

1 Roll = 224 calories and 6 WW Points Plus




Ingredients:


9 lasagna noodles, cooked


1 (10 ounce) package frozen chopped spinach, thawed and completely drained


1 (15 ounce) container fat free ricotta cheese


1/2 cup grated Parmesan cheese


1 egg


1/2 teaspoon garlic powder


1/2 teaspoon Italian seasoning


salt and fresh pepper


32 oz tomato sauce


9 Tablespoons part skim mozzarella cheese, shredded


Preheat oven to 350°. Make sure you drain the spinach well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasoning, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry by patting them with a paper towel. Take 1/3 cup of ricotta mixture and spread evenly over a noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles. Ladle sauce over the noodles in the baking dish and top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts.


Makes 9 rolls.To serve, ladle a little sauce on the plate and top with lasagna roll.

Recipe Share~ Easy Chicken bake

Made this tonight and it was SOOO yummy! (and SO easy!)
My whole family loved it and asked me to make it again!
Easy Chicken bake
1 box chicken flavored stuffing (makes 5 cups)
1/3 cup milk
1 10 oz can cream of chicken soup
1/2 Tbsp parsley
1 Tbsp Paprika
4 boneless, skinless chicken breasts, defrosted & cut into bite sized pieces
2 cups shredded cheddar cheese
Preheat oven to 400°. Prepare stuffing as directed on box.
Spread cooked stuffing evenly on bottom of 2 Quart shallow dish.
Stir in chicken chunks. In a small bowl, mix together soup, milk, parsley & paprika.
Pour over chicken/stuffing. Add one cup of cheese. Mix well.
Cover with foil, and bake for 30 minutes.
After 30 minutes, uncover and put enough cheddar on top to cover it.
Bake an additional 15 minutes.
Allow to cool about 10 minutes before eating.
That's it! SO YUMMY and SO EASY! :)

Recipe Share: Breaded Venison Chops

As you may have read in my post below, my son N shot his very first


deer on Thursday. Luckily, my family is a bunch of rednecks, and my step dad is a butcher. (lol)


So, we got the deer meat from it on Sunday.




For dinner today, we decided to cook up some of the venison chops and let me tell you...


mmm mmm mmm!! :)


My sister makes breaded pork chops all the time, so we thought we'd try it with the venison chops. So without delay, I bring you the tasty (and oh-so-simple!)


recipe for breaded venison chops. :)




Breaded Venison chops




Ingredients:


Deer chops


Italian Bread Crumbs


Eggs


Salt


Onion Powder


Garlic Powder


Oil




Defrost Venison meat, and soak for about an hour in cold water.


(Do this to soak out the blood, and to take out the "gamey" taste.)


Preheat oven to 350. Next, heat oil in large frying pan.


Crack eggs into bowl & Scramble with fork. Add a little bit of onion powder & salt.


Dip Deer chops in egg, then dip in bread crumbs and coat well.


Place in hot oil for about 10 min. each side. Place on paper towel briefly to soak


up a bit of the oil. Then place in a 9x13 baking dish, and put in oven for 20-30 min.


Do not overcook, or meat will be too dry.


Serve with your favorite sides. :) Enjoy!

Recipe Share: Crockpot Apricot Chicken

So, lately I've decided to try new recipes I've found online. This is the second one.
It came out really yummy, so I had to post it on here for you all to try.
Crockpot Apricot Chicken
Ingredients:
6 frozen boneless, skinless chicken breasts (Do not thaw)
2 pkgs. dry onion soup mix
1 c. French salad dressing
2 cup apricot preserves
4 TBS. Red wine vinegar
2 tsp. thyme
1/8 tsp. black pepper
3 TBS. Cornstarch
6 TBS. cold water
Directions:
Place chicken breasts in crockpot. Mix remaining ingredients (except water & cornstarch) in medium bowl, and pour over chicken. Stir around to coat well. Cover crockpot. Cook on low for 8 hrs. Before serving, combine cornstarch & water in small bowl. Mix until smooth. Add to the crockpot & turn the temp. to high for 10 minutes to thicken sauce. Serve over rice.

Recipe Share: Spinach & Cheese stuffed Meatloaf


I made this for dinner tonight & it was SO good!
So, I figured I would post the recipe. :)
(you can't see the spinach, but there's lots in there & it's really yummy!)
Spinach & Cheese Stuffed Meatloaf
Ingredients:
Loaf:
1.5 lbs. ground beef (or turkey)
3/4 c. bread crumbs
1 egg
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. Italian seasoning
Filling:
1 (10 oz.) package frozen chopped spinach, thawed & drained well
1 cup shredded low fat cheese of your choice
3 TBS grated Parmesan cheese
1 tsp. Italian seasoning
1/8 garlic powder
Topping:
1/4 cup Ketchup
1/2 cup shredded low fat cheese
Directions:
In a large bowl, lightly combine meatloaf ingredients.
On a waxed paper, pat into a 14 x 10 inch rectangle.
In a medium sized bowl, combine filling ingredients. Spread over rectangle, leaving about an inch around all edges. Starting with a short end, roll up jelly roll style. Press meat over filling at both ends to seal. Place loaf, seam side down, in a baking dish.
Bake uncovered at 350° for one hour. Spread with ketchup and sprinkle with cheese. Cook 15 minutes longer, or until cheese is melted. Let stand 5 minutes. Cut into 1 inch thick slices.
Makes 6 servings.

What's cooking Wednesday

For this week's What's cooking Wednesday,
I thought that I would post some Christmas cookie recipes.
Here is one that I use every year, and I have given it to my sister and my mom
who has passed it on to others.
3 ingredient, "Santa's favorite" Peanut Butter Cookies
ingredients:
1 cup packed brown sugar
1cup peanut butter
1 egg
granulated sugar
directions:
Preheat oven to 350°. Mix all ingredients. Roll mixture into 1 inch balls
(or you can use your Pampered Chef® scoop-that's what I do and they come out the
perfect size.)
Dip the tongs of a fork in granulated sugar, and make a criss cross pattern across the
cookie. Bake in the oven for about 10 minutes. Cool and enjoy with a glass of cold milk.
Another type of cookies that I've made before are
Stained glass cookies
I just used refrigerated sugar cookie dough.
Start by crushing brightly colored candy (such as lifesavers®) into small pieces.
Preheat the oven to 350°. Roll out the sugar cookie dough and cut into
desired shapes. Inside the shapes, cut smaller shapes in the middle.
Fill the small opening in the cookie with crushed candy pieces.
Bake for 10-15 min. until cookies are lightly browned and candy is melted.
Cool completely before eating.
(*Remember that the candy will become hard again.*)
This next recipe is for my FAVORITE cookies, that my Mother-in-law, Helen,
makes. They are sooo good. (and not-so-good for you! LOL)
Buried Cherry cookies
ingredients:
1 (10 ounce) jar Maraschino Cherries (42-48)
1/2 cup butter or margarine
1 cup sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 1/2 teaspoons vanilla
1/2 cup unsweetened cocoa powder
1 1/2 cups all purpose flour
1 (6 ounce) package (1 cup) semisweet chocolate chips
1/2 cup sweetened condensed milk
Directions:
Drain cherries, reserving juice. In a medium mixing bowl beat butter with an electric mixer in medium to high speed for 30 seconds. Add the sugar, baking powder, baking soda, and 1/4 teaspoon of salt. Beat until combined, scraping sides of bowl. Beat in egg and vanilla until combined. Beat in cocoa powder and as much of the flour as you can with mixer. Stir in remaining flour using a wooden spoon. Shape dough into 1-inch balls. Place balls about 2 inches apart on an ungreased cookie sheet. Press your thumb into the center of each ball. Place a cherry in each center. Bake in a 350 oven for 10 min or until edges are firm. Cool 1 minute on cookie sheet. Transfer to a wire rack and let cool. For frosting, in a small saucepan combine chocolate chips and sweetened condensed milk. Cook and stir over low heat until chocolate is melted. Stir in 4 teaspoons reserved cherry juice. Spoon 1 1/2 teaspoon frosting over each cherry, spreading to cover (frosting may be thinned with additional cherry juice if necessary). Allow frosting to cool and set before eating.
So, those are some of the cookies I've made before for the holidays and
will probably be making again this year.

A recipe to go with my Movie Review Monday

I was watching one (of many) of my favorite Christmas movies
after I wrote my review,
and I noticed that Nora Krank said that
Caramel Cream Pie was Blair's favorite.
I thought that sounded good.
I thought that I would look it up and add it to my
Movie Review Monday posting.
So, Without further ado, here is the recipe for Caramel Cream Pie. :)
Caramel Cream Pie
ingredients:
1 (9-inch) graham cracker crust
2 (14 oz) cans sweetened condensed milk
1 (7 oz) jar marshmallow cream
1 (8 oz) container whipped topping
Directions:

Place the cans of sweetened condensed milk (labels off, unopened)
in a large pot; bring to a boil,
then lower the heat and simmer for 3 hours,
making sure the water stays above the cans.
Let cool 1 hour.
CAREFULLY open the cans and scoop contents into large bowl.
Fold in the marshmallow cream. Pour into pie shell.
Chill in refrigerator for several hours or overnight.
Serve topped with whipped topping.
When cooked that long, the sweetened condensed milk turns into caramel. Very yummy and so easy!

Recipe share


So, I thought it might be kind of fun to do a recipe share. :)
I don't have many of my own recipes, but here is one of mine (Peanut butter cookies)
and a few others that I found while browsing the internet.
Easy, No Flour Peanut Butter Cookies
ingredients:
1 cup creamy peanut butter
1 cup brown sugar
1 egg
1/4 cup granulated sugar
Directions:
Preheat oven to 350.
Mix all ingredients together and roll into 1 inch balls.
Place on ungreased cookie sheet.
Use fork dipped in granulated sugar to make a criss cross pattern on
the top of each cookie.
Sprinkle each cookie with sugar.
Bake for 12 minutes.
Cool 2 minutes before removing from cookie sheet.
Homemade Cream of Chicken Soup
ingrediants:
1 1/2 c. chicken broth
2 T. minced onion
1 garlic clove, minced
1/2 tsp. poultry seasoning
1/8 tsp. black pepper
1/4 tsp. salt
1/4 tsp. parsley
dash of paprika
1 1/2 c. milk
3/4 c. flour
Directions:
In medium saucepan, boil broth, 1/2 c. of milk, onion, garlic
and seasonings until onions and garlic are tender.
Wisk together remaining 1 c. of milk and flour, then add to boiling mixture
and wisk continually until mixture boils and thickens.
Makes about 3 cups of soup.

Applesauce Bread
ingredients:
1 1/2 c. whole wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. honey
3/4 c. applesauce
2 eggs
4 T. butter, melted
Directions:
Mix dry ingredients together, then make a well in the center.
Combine honey, applesauce, eggs, and melted butter.
Pour wet mixture into well of dry ingredients and stir thoroughly.
Pour into greased bread pan and bake at 350 for 45 minutes.
